2127Hi, I work in CCRC. My facility has a potential admission who is a vegan. I am wondering if any of you have any information on if we are required to offer veganese meals in addition to our current menu if this resident were to come to our LTC center. As far as diets are concerned, of course we are to give speciality diets as prescribed the physican, carry speciality products for people with food allergies, and honor any religious dietary preferences. But when do we draw the line of what diets to accomodate? Any thoughts or suggestions would be appreciated.

01/17/12  I have worked in a CCRC and numerous SNFs, and we most definitely have to meet the preferences of our residents. If the facility can not meet their needs, then deny admission. Vegan is not hard to do.

10/30/11  Hi Anahita: The American Diabetes Association does not have a specific recommendation for fruit consumption. The carbohydrate content of the fruit is calculated as part of the carbohydrate in the total meal. Fruit is an important part of a healthy meal plan for all Americans, whether they have diabetes or not. I do encourage my clients to purchase a kitchen scale that measures in ounces such as those from Escali, so they can more accurately determine the carbohydrate content ...

2077How do you get a picky eater to try new foods? I have an eight year old who is extremely picky--no meat, no fruit, no vegetables . . . She has always been very very picky (there are many "treats" she doesn't even like that most kids would love). (I have always wondered if her food allergies (severe peanut and egg) influence her diet. But that is another topic all together!) Anyway, how do I get her to try new foods? I know that it takes many tries to gain the appreciation of a new food, but every try is a struggle. A big struggle, and so I have basically given up, as I am terrified of food becoming a "battle" and the implications this could cause later in life (such as an eating disorder.) I've read so many conflicting things: reward them for trying, don't reward, just offer and if they want it they will eat it . . . I make her something different than what my husband and I eat every night. If I were to give her the option of eating what she is served or eat nothing, she would (and has) picked nothing, every time. I make her something different that I know she will eat so that I can be sure she is getting some nutrition. I now feel like we are just in a circle that is going no where. I would sure appreciate any input on what I should be doing. This is a subject that always weighs very heavily on my mind. Thanks in advance, I truly appreciate it!

2066I am a student enrolled in a distance DTR program and I am struggling to find a preceptor. I have wrote to many dietitians and none have replied back to me. The closest I have come was being told by someone in WIC that I could come and observe. I am so upset and frustrated over this and my time is getting closer and closer to the cutoff date that I need to find one by. I have Googled "preceptor-my area name" trying to find leads to no avail. Short of walking into a hospital and getting down and my hands and knees and begging an RD what else can I do? Is there a preceptor list that I am missing? I have asked two RDs as well- one a professor at my community college as well as one who works in WIC and they never even heard of this role and said they don't have time to help me. :( I have also joined the ADA and couldn't find anything there either. I am getting discouraged. :(

06/30/11  Call over to local hospital/s and ask to speak with clinical nutrition manager or one of the dietitian\'s. Always harder to refuse someone in person though ;)Explain your dilemna, they may be able to ...
